dropping a 2.8 in my 240z, and discovered whilst lowering the engine into the bay, that the mounts look different, one is a little curvier than the other one, which looks a little longer, should I put the longer one on the intake side, and the shorter, curvier one on the spark plug side? help!!! thanks!

strange

I have yanked 2 motors from 280Zs and the motor mounts were the same size.

Its a bitch trying to line those things up with the bolts while you are putting the engine in, you want to hold em in place so they dont move, but you also dont want your friend accidentally dropping a 650lb block on your fingers.

You have it right.

The engine cants over to the passenger side (tilts) and the mounts are the same but the brackets are different. The short one is passenger side, the long one is drivers side. Unless your in Australia or the UK where they drive on the wrong side of the road.
