Make sure you check the valve to piston clearance, since it is reduced both by milling the head and by using a thinner head gasket. If a valve ever contacts a piston, its bye-bye engine.
The cheap way to check it is to put a piece of modeling clay on top of a piston, then torque down the head. Then turn the engine by hand through a couple of cycles. Finally, pull the head and measure the thickness of the clay at its thinnest point.
