Hi, I finally built my 3.0L and want to make sure the su's are going to work with my setup. I have a milled head fully ported and polished, oversize valves etc... Well I want to make sure these carbs can push enough gas to my engine. will they? Also, i plan on running NOS with this engine, in the near future, are these carbs appropriate for doing that. Lastly, can i use NOS and alcohol injection simultaneously. I Want to cool the engine while boosting it. All you motor heads out there let me know what you think.

I think that the theoretical volumetric efficiency of your motor may have the potential to outdraw the SUs. That's theoretical mind you. Talk to the guys at www.rebelloracingengines.com . They sell "big bore" SUs and may be able to help you determine if you require them vs. your stock SUs.

You can run NOS by injecting NO and gas directly into the intake...the carbs aren't really a part of the equation. Don't know about the alcohol injection though.

Alcohol unrequired.

Your cooling medium is the vaporizing NO2. You just need to have enough gas.
The 3.0 will run fine on a street engine if you rework the SU's, and will retain stock drivability as long as you go to a reputable, reliable shop (like Rebello). Depends on what you are doing with the engine. If you have cast pistons, stick with the SU's, as the hp gain you will get between 5500-7000+ will be 20 or so HP from stock SU's, but half that with reworked units.
