1981 280zx, its really hard to get it to start, you have to be holding the gas pedal down to get it to fire, still very hard to get to start. It will not idle either, just dies out, if you keep giving it throttle itll run, also once its been started and warms up, I cant get it to start again until it cools down. It will not idle at all, just dies. Does anyone have an idea of where to begin looking, Im new to z cars. Thanks.
You're going to have to measure your fuel pressure in PSI's and let us know yoour fuel pressure at idle. Without this you will get dozens of different suggestions. NK
Clean connections on the coolant temp sensor, and or replace. Read "Message to Newbies".
Resolution to such problems have been beaten to death and reiterated over and over and over and over on this forum. After searching and noting attempts at repair, come back.

the coolant temp sensor won't do you any good on an s130 except maybe make the temp gage read correctly but the cylinder head temp sensor might have something to do with poor running. download the fsm from xenon. use google. search on vacuum leaks and cleaning sensor connectors. if you want good answers you need to give some data. just as in the computer world "garbage in garbage out".
It's your "Idle Air Control" valve...either the connection or the valve itself. Your cold start injector could also be not working but it's the IAC valve that keeps the thing running when it's cold...you may need to adjust your idle screw too...and you may have an intake leak also...I'd need to know more details about the problem to narrow it down. My IAC valve never worked so I just had to keep my foot on the gas until the engine was warmed up...and it usually takes 3-5 cranks to get it to start up.
pretty much narrowed it all down to the CSV, just cleaned the connectors and it started just fine, idled ok but got a lot better when warm ill check the other. The problem now is it died when i took it for a test drive, massively over charging, i made a new thread about it. Im worried something fried, never smelled anything burning and the fusible links are good though. Not sure exactly why the overcharging would make it die though if it didnt burn anything
