I just recently bought a 72 240z with a Chevy 350 small block. I have no clue on where the coolant reservoir is located at or if it even has a coolant reservoir. Car runs and all too.

If you can't see it in the engine compartment, either there isn't one or it's in some weird place. With a conversion like that, really no one can tell you unless it's in the stock location in the engine compartment - which it's not.

Here's an "oh yeah, huh" on my part....the easy way is to see if there's an overflow tube/line from the radiator to....something. After all, overflow comes from the radiator and if there's a line, then where the line goes will either be a dump onto the ground, or a reservoir. Just follow it to the destination.

The small black hose coming off the coolant neck in the top hose that is going towards the driver side and down to the ground is the overflow line. If your Z has an overflow tank it will be at the end of that line. It is not necessary to have an overflow tank, your car will still operate as usual without it.
