Car seems to over heat.

Last couple of days may 240z has been getting on the hot side,The temp meter hits red i pull over but with out turning off the car seems to cool down,Also when im on the freeway it starts to get hot but as soon as the car speeds up it cools down any ideas the waterpump is new.

If its the original radiator it needs to be serviced. I swapped in an aluminum radiator and it reaches about 150 at idle 140 around town, and 110-120 on the interstate in georgia with no fan shroud. Looks good too.
Try flushing the coolant system. You can let a garden hose flow through it to help flush, if nothing else
If the engine is running too lean and the timing is retarded too much the engine will run hot.

The fact that itcools down when stiopped says a lot. It heats up when you are producing more friction/heat than it can dissipate.That'd rule out a fan, shroud and probably thermostat. Though it may be opening just enough to let a small amount of circulation. You could remove the thermostat and see what happens. It should run extremely cool and not get up to operating temp. If it does, it would point to your radiator....or crappy water pump.
1) When was the last time the cooling system was serviced?

2) When you say " new " is it new Nissan or New Pepboys?

3) Do you know how to test your fan clutch?

4) What ratio of coolant to water are you using?

5) Does the car have after market A/C?

6) Have you looked at the front of the radiator for bugs, bags or dead racoons?

7) Does the coolant system make / hold pressure?

If the fan clutch was bad it would be heating up at idle. At speed it would cool itself down.
The temp meter hits red i pull over but with out turning off the car seems to cool down, ( would seem to indicate the fan clutch is working )
When im on the freeway it starts to get hot but as soon as the car speeds up it cools down ( would SEEM again proper airflow )

But more direct facts are needed..

Like when was the last time the radiator was topped off... is the overflow working. and on & on..

Start cheap. Chemical flush...then give up and install a new rad. 280 3-cores are cheaper than 240 2-cores. Shave the bottom flanges and they drop right in. Scrap the clutch fan and install an electric. At idle or freeway...problem solved.
