I know this seems straight forward but I want to be through out it, I'm swapping near a entire dash unit from a 80 into a 82, I'm gonna have to rewire the defroster I know already, but anything else I should know about? one of my white connectors has a slightly different layout then the one currently in the car, the unit being swapped in includes all the harnesses connected to the dash, and the 3 center gauges still

the dash should be a direct fit... as far as the connections and wires go, they could be different. get a copy of the free FSM over at xenonzcar.com and download the 80 and 82 and review the interior and electrical sections. also a good idea to look up some of the parts diagrams on nissanpartsdeal.com; you will be able to have a good look at the components there.
