I have a 1987 nissan 300zx N/A, bought it off the original owner for $1,000 my plan for the z is to drop VG30DETT with a 350z 6 speed manual, just wondering what's anyone's opinions thoughts or recommendations

I don't think that that engine will be able to fit in the z31 engine bay. If it can, you also need to make sure to upgrade all of the associated axels, etc. to ensure they can handle the new hp and torque.
It's a big overhaul but if you can do it, good for you!
