If the red line is at 7,500, then you can take it up to 7,500 RPMs before you need to be concerned with anything. Obviously you shouldn't drive it like that ALL the time, that's what I tend to do though and its bad for things.
If you're really curious about your car, the best way to find your shift point is to get your Z on a dyno and race it a few times. You may find that you get the best quarter mile time on the dyno when shifting at redline.
But in the end it all depends on the car and whats done to it. When my Z31 was stock, I would shift at 5,500 to get my fastest times even though the redline was at 6,000. Now that I've changed out the cams, valve springs, cam gears, etc etc.. I take it up to 7,200 RPM in first and second (although I really should kill it earlier, it just sounds so cool) and 6,500 RPM in 3rd and 4th. I suspect once I change out the pistons for ones with a 12.5:1 compression ratio and re-port the intake runners again, I should be able to get my rev's up to over 8000RPMs of usable power.
